After the very first opening in Rome in 2016 and the multiplication of its premises, Akira Yoshida, a Japanese
naturalized Italian entrepreneur, inaugurates an artisan workshop entirely focused on ramen, in the Trevi
Fountain, with 20 seats in the outdoor area. The menu is expanding: 12 types of ramen, including broth based on
pork, chicken, or vegetable. The customer can also customize the dish: he can choose the thickness of the
spaghetti, its cooking time and also between various types of toppings, such as pork slices, boiled egg marinated
in soy, nori seaweed, leek and the spicy sauce. And for the summer? There is Hiyashi Cold Ramen, served cold,
with sliced pork, tomatoes, cucumbers, omelettes, soy sauce with ginger, sesame and seaweed. There is no
shortage of other typical dishes, such as edamame (soy beans), onigiri (rice balls stuffed with fish or vegetables),
gyoza (fried ravioli filled with chicken or vegetables), takoyaki (fried octopus balls), karaage (morsels of fried
chicken), curry Don (white rice, curry sauce, potatoes, carrots and onion), chashu Don (pork marinated in soy
sauce, topped with leek, hot sauce, nori seaweed and white rice). Two types of desserts are also on the menu:
dorayaki, a pancake filled with Azuki red bean jam, and taiyaki, the same typical dessert but in the shape of a
fish.
